Appetizer Meatballs

1 lb. ground beef
¾ tsp salt
1 T minced onion
½ cup peanut flour
¼ cup yogurt
2 T butter
3 T honey
3 T prepared mustard
3 T vinegar
¼ cup homemade ketchup
¼ tsp dried thyme

In a large mixing bowl, combine meat, onion, peanut flour and yogurt. Toss
lightly until well blended. Shape into bite-sized meatballs. Roll in any fine
nut flour. Preheat fry pan to 320 or a stove top pan on medium to medium high.
Melt butter in hot fry pan. Brown the meatballs on all sides in hot butter.
Remove meatballs as they brown. Combine remaining ingredients and stir into fry
pan. Stir well to bring up bits of browned meat from the bottom of the pan.
Bring to a boil. Add meatballs to sauce. Cover and simmer 8-10 minutes,
stirring occasionally. Serve as hot appetizers with toothpicks.
