Bacon Guacamole Dip
Ingredients
1 jalapeno, seeded and minced
2 slices of bacon
1 avocado, very ripe
2 tbs. fresh onion, minced
1 small tomato, minced
1 tbs. lime juice
1 tbs. fresh cilantro, chopped
1/4 tsp. salt
1 clove garlic, minced
Cook bacon, and set aside to cool.
Saute jalapeno in bacon drippings, drain well.
Meanwhile, slice avocado in half, remove pit, scoop out the flesh, and put it into a mixing bowl.
Mash avocado to your consistency liking.
Stir in onion, tomatoes, lime juice, cilantro, salt and garlic.
Crumble bacon.
Stir both the bacon and well drained jalapenos into the mole.
Cover and refrigerate, or you can even serve it now at room temperature.
Makes about one cup.
