Breakfast

My breakfast is simple, day in day out, I love it and don’t get tired of it.

1 glass freshly squeezed orange juice
4 soft boiled eggs
1 slice of butter and 1 slice of cheddar cheese.

My two favorite breakfasts are;
A slice of banana bread, split in half, buttered, with an egg (over easy) on
each half, and some bacon on the side.
Or a big hunk of banana bread, topped with lots of yogurt, drizzled with
cooked blueberries and pecans. This one is also a favorite lunch to take to
work, or light dinner. I never get tired of this and have it at least a few
times a week. The one problem with taking it to work is that it makes
everyone drool, and by the time they all have “just a taste”, there’s hardly
enough left for me.

I’ve never liked sweet food in the morning. My favourite breakfast is
sauteeing, in butter, a diced onion, carrot coins, green peppers (skinned),
salt and pepper until soft. Add a diced, skinned tomato and some capers.
Turn the frying pan down to very low simmer. Separate the mixture to make
two or three ‘craters’, and drop an egg in each one. Cover and simmer for 10
minutes or more until eggs are fully cooked. Sprinkle with grated cheese. I
usually make a three-egger, having two for breakspup and saving one portion
to eat cold later in the day.

and its really filling.
Roast Beef Grilled Cheese ‘Sandwich’

from your local grocery deli, buy a pound of slice roast beef, i like mine
alittle thick, take one slice and lay some cheese you have sliced into thin
slices, on top of roast beef. then fold it in half like a sandwich and you
can pan fry to melt cheese or you can put it in the microwave to melt the
cheese. I like to have this in the mornings for breakfast with a cup of
coffee.

Sausage “Sandwiches”
Sausage sandwich: make 3-4 pounds sausage mixture, like Lucy’s Breakfast
Sausage. Pack firmly into a standard loaf pan, cover with foil and bake for
about 2 hours at 275F or until center reached 170F. Chill completely, then
slice loaf thinly. Place one slice sausage on oven-safe dish, top with one
thick slice legal cheese, top THAT with another slice sausage, and heat
until cheese just melts. Can be heated in microwave, toaster oven, or on a
Foreman grill. Eat with fork. )

I make them up on Sunday, and then just unwrap, heat, and
eat during the week!
