Hi Everyone,
Just thought I’d let you know that it’s possible to substitute coconut
flour (made from blenderizing unsweetened coconut flakes) for almond flour
in Lucy’s cinnamon cookies. I got a large package of coconut at a very
good price recently and decided to give coconut flour a try — lo and
behold it worked! I didn’t make any changes in the cookie recipe except
the flour (same amount as for almond flour) and now I’m thinking of trying
to make some other goodies too. It could cut my baking costs by about two
thirds for awhile until I use up the coconut.
