Carrots are legal but a very few people have reported that they have
problems with them.
Look at it this way when it comes to things like carrots. They contain
legal sugars and very little starch when they are young and fresh. However,
if they are stored, some of the sugars do turn to starch. (this is unlike
fruit whereby unripe fruit starch turns to sugars when fruits ripen).
Dr. Haas did not eliminate carrots when our child was on the diet and was
cured of UC. I investigated the types of starch in many grains, legumes,
vegetables but because there are sooooo many cultivars (different genetic
types), I could not do too many of them.
So I have to give you a general opinion in the book: carrots are legal, but
try and get small, fresh ones. This you can do in large supermarkets like
Whole Foods but not everyone can do this.
If I put all this information in the book, every food item would have a
chapter and would discourage people and confuse them. That is why the
listserv is so valuable.
