I did my master’s thesis on sugars and much had to do with fructose
intolerance (there is a genetic inborn error or metabolism called
fructosemia) and I think I have a fairly good understanding of it. I
cannot agree with Dr. Gibbons about the fructose in fruits. It is
absorbed differently than the fructose which is part of the sucrose
molecule. Consequently, it does not reach the liver too quickly and
does not cause elevations into the bloodstream.
But he is talking about it getting to the colon and causing problems.
Fructose from fruit is absorbed quite nicely and the probability of it
getting to the lower gut is far less than the grains (starch) that he
thinks are OK.
I can’t believe that these people write books when they do not
understand that starch is sugar which is undoubtedly not being digested
and absorbed and they seem not to be aware of this culprit and blame the
wonderful fruits which are so natural to man’s diet.
