Homemade Curry Powder
Ingredients
* 8 tablespoons coriander seeds
* 2 tablespoons cumin seeds
* 2 tablespoons black peppercorns
* 1 tablespoon cardamom pods
* 1 or 2 small dried chilis
* 2 or 3 cloves
* 3 tablespoons turmeric
* 2 tablespoons ginger powder
In a heavy pan over med heat roast first 6 ingredients; until lightly toasted and fragrant; about 4 minutes.
Shake the pan frequently.
Cool this mixture.
Transfer to a blender; grind to a fine powder.
Add the turmeric and ginger and blend some more.
