Pressure Cooker Boiled Peanuts

These directions call for raw ‘green’ peanuts in the shell, but you can also use dried peanuts in the shell by soaking them overnight in a salty brine before boiling them.

Wash about 2 pounds [1 kg] of peanuts in the shell in cold water until the water runs clear.

Soak peanuts in cool clean water for 30 minutes before cooking. Many people skip this step, but I have found that it helps the peanuts absorb the salt by making them moist and soft before boiling.

Place peanuts, 1/2 cup of salt and enough water to cover the peanuts in the pressure cooker. The amount of salt can be adjusted to taste.

Once the pressure gets up and starts hissing then you start timing for 30 min.

I remove from heat and let cool with the pressure on for about 15 minutes then open and leave in the water until cool. This lets the salt and water to soak in. If you don’t let it soak in they are cooked but dry and not salty.
